Wild Albacore Tuna and Artichoke Salad


INGREDIENTS:

  • 1 can (150 gr/5.3 oz) RAINCOAST TRADING Wild Albacore Tuna, drained
  • 2 tsp (10 ml) balsamic vinegar
  • 2 Tbsp (25 ml) mayonnaise
  • 1 tsp (5 ml) lemon juice
  • 1 can (142 gr/14 oz) artichokes, drained
  • 2 medium green onions, sliced
  • 2 Tbsp (25 ml) pitted black olives, sliced
  • 3 fresh basil leaves, chopped
  • 3 fresh or sun-dried tomatoes, sliced
  • Salt (optional) and pepper, to taste
  • One head butter lettuce or romaine lettuce

PREPARATION:

  • In a medium bowl, mix together balsamic vinegar, mayonnaise and lemon juice
  • In a separate bowl, flake tuna with a fork
  • Cut each artichoke heart into 4 pieces
  • Combine ingredients and toss gently
  • Add salt & pepper to taste
  • Arrange the mixture on a bed of lettuces
