Curried Pasta with Wild Albacore Tuna
Ingredients:
1 can (150 gr/5.3 oz) RAINCOAST TRADING albacore tuna, drained
3 cups (720 ml) pasta, cooked
¼ cup (60 ml) plain yoghurt
¼ cup (60 ml) light mayonnaise
1 tsp (5 ml) mild curry paste
1 tsp (5 ml) lime juice
Salt (optional) and pepper, to taste
2 tbsp (25 ml) fresh cilantro or parsley
1 tbsp (15 ml) dried cranberries or raisins (optional)
Preparation:
1. Blend yoghurt with mayonnaise, curry paste and lime juice
2. Stir in cilantro or parsley
3. Flake tuna with a fork
4. Cook pasta according to package directions.
Drain and rinse well in cold water.
5. Combine pasta, tuna and cranberries or raisins.
Add yoghurt mixture and toss to coat.
6. Add salt & pepper to taste

Serve and enjoy!
