Grilled Wild Sockeye Salmon Burgers

Ingredients:

1 can (150 gr/5.3 oz) RAINCOAST TRADING skinless, boneless sockeye salmon, drained

1 egg, slightly beaten

¼ cup (50 ml) finely chopped onion or shallots

¼ cup (50 ml) thick barbeque sauce or salsa-type sauce

1 cup (250 ml) fresh whole-wheat breadcrumbs

4 slices cheese (optional)

4 whole-wheat hamburger buns or rolls

 

Preparation:

- Drain salmon thoroughly, squeezing out excess moisture

- In bowl, flake salmon with a fork.

- Add egg, onion, sauce and bread crumbs

- Blend thoroughly until mixture is almost smooth

- Divide mixture and form into 4 patties

- Place on spray-coated or oiled pre-heated grill or broiler pan, about 4 to 5 inches from heat. 

Grill 4 to 5 minutes per side.

- Add cheese, if desired

- Serve on your choice of bun or roll
