Apple, Cheddar Cheese and Wild Tuna Melt Ingredients: 1 can (150 gr/5.3 oz) RAINCOAST TRADING wild albacore tuna, drained 1 Tbsp (15 ml) mayonnaise 1 tsp (5ml) lemon juice ¼ cup (50ml) celery, diced ¼ cup (50ml) red onion, diced 1 Granny Smith apple, peeled and chopped into small cubes Fresh ground black pepper Sourdough baguette ¾ cup (175ml) grated Cheddar cheese Preparation: In medium bowl add tuna, mayonnaise, lemon juice, red onion, celery, and apple Grind pepper in to taste. Combine well Cut baguette into 8 slices about ½ inch/ 1cm thick Cover baguette slices with mixture, and sprinkle with cheddar cheese Place rack in top portion of oven, and turn on broiler Place the slices on a cookie sheet and put under broiler for 2-3 minutes You want the cheese to be bubbly and brown, but not burnt, and you want the slice to be warmed through Enjoy!
