Curried Pasta with Wild Albacore Tuna Ingredients: 1 can (150 gr/5.3 oz) RAINCOAST TRADING Wild Albacore Tuna, drained 3 cups (720 ml) pasta, cooked ¼ cup (60 ml) plain yoghurt ¼ cup (60 ml) light mayonnaise 1 tsp (5 ml) mild curry paste 1 tsp (5 ml) lime juice Salt (optional) and pepper, to taste 2 Tbsp (25 ml) fresh cilantro or parsley 1 Tbsp (15 ml) dried cranberries or raisins (optional) Preparation: Blend yoghurt with mayonnaise, curry paste and lime juice Stir in cilantro or parsley Flake tuna with a fork Cook pasta according to package directions Drain and rinse well in cold water Combine pasta, tuna and cranberries or raisins Add yoghurt mixture and toss to coat Add salt & pepper to taste Serves 2-4
