Wild Albacore Tuna Garden Salad Ingredients: 1 can (150 gr/5.3 oz) RAINCOAST TRADING Wild Albacore Tuna, drained 1 small head butter lettuce 2 hard-boiled eggs, sliced 1 cup (250 ml) green beans, cooked & cooled 1 medium carrot, grated or ribboned 6-8 yellow or red grape tomatoes ¼ cup parsley, chopped 4-5 baby potatoes, cooked, cooled & sliced or cubed Italian or vinaigrette dressing Preparation: Place butter lettuce in bottom of serving bowls (one for each guest) Divide vegetables into portions Layer potatoes, green beans and carrots in the center of each bowl In a separate bowl, flake tuna with a fork Top vegetables with tuna and garnish with parsley Place alternating slices of hard-boiled egg and grape tomatoes around the bowl Pour dressing over the salad Serves 2-4
