Wild Pink Salmon Fish Cakes Ingredients: 1 can RAINCOAST TRADING Skinless Boneless Pink Salmon, drained 1 cup creamy mashed potatoes ½ cup fresh or frozen peas, cooked 1 egg, lightly beaten 1 green onion, sliced 1½ tsp fresh dill or ½ tsp of dried dill 2 Tbsp whole-wheat flour 1 Tbsp butter 1 Tbsp vegetable oil Preparation: Mix together all ingredients except flour, butter and oil Form mixture into 4 patties, and dredge them in flour Over medium heat, melt oil and butter together When foamy and bubbly, add patties and fry evenly on both sides until nicely browned, about 5 min per side Serves 2-4
